blueberry macadamia nut muffin

Adventurous Living… with Blueberry Macadamia Muffins?

Cooking has always been a favorite past time of mine, since early childhood.

There’s something special about making your own treats, giving friends and neighbors a plate of homemade cookies, and providing for your family.

As a Californian mom, I love baking with my daughter and teaching her all the cooking skills I can. On a good day, we have a great time and have success with our recipes. And, on a bad day, we usually still have fun – or at least eat something nice!

Some of our favorite recipes involve tropical foods and spices, so we’ve recently started Read More

Raspberry-Apple Champagne Slushies

Raspberry-Apple Champagne Slushie

Here’s a fruity frozen drink that’s elegant, fizzy and easy to make. To come up with this recipe, I used a frozen Raspberry Margarita margarita recipe I found online and substituted Champagne for tequila and added some pureed apples to boot. It’s really good!

Ingredients

  • 1 cup raspberry margarita mix – or – 6 oz frozen raspberries if you don’t want the lime
  • 1/2 cup finely-diced green apples, skinned
  • 1.5 oz. Triple Sec (adds an orange zest and a little more alcohol)
  • 1 cup crushed ice
  • 1.5 cups Champagne or sweet Sparkling Wine
  • add sugar to taste

ponzu steak

Ponzu Steak

It is no secret that I love Asian cuisine and tropical-flavored cooking.

So you might think Ponzu would be a household name in my home.

However, it was not my fetish for exotic recipes and ingredients that introduced me to this delicacy. My first Ponzu date happened by accident, when I was shopping for Japanese soy sauce in a food mart in California. It was not until I got back home that I realized what was in my shopping cart was not soy sauce but ponzu sauce. WTF is that, I asked?

This was the start of my love affair Read More

Asian Cucumber salad

Asian Cucumber Salad

Cucumber salad is one of those side dishes that seems to work with almost any tropical or Asian food.

Knowing just how much I love tinkering in my kitchen, I’ve spent countless hours trying to perfect the best cucumber salad that I can.

The good thing is that most of the ingredients I use in this recipe are really easy to find – I didn’t have to spend all day in a grocery store.

My husband gives this salad a big thumbs up.

INGREDIENTS

• 3 cucumbers halved lengthwise, seeded and sliced into small portions

• 2 teaspoon kosher salt… Read More

asian roasted asparagus

Asian Roasted Asparagus

Chock-full of fiber, Vitamin C, Vitamin A, iron and anti-oxidants, asparagus is an awesome veggie that you can use in many tasty recipes.

You can only find fresh asparagus in the spring. In the past, it has been used as a medicine due to its diuretic properties and special aroma. Believe it or not, the asparagus has been a favorite among people since 3000 BC, first mentioned as an Egyptian staple.

Asperge is made of 93% water and it’s very low on calories as well as sodium. It is a great source for magnesium, calcium, zinc or vitamin B6 and Read More

butternut squash mac and cheese

Butternut Squash Mac & Cheese

It’s amazing how much better life is, with mac and cheese in it.

I can’t help but laugh to think about my younger days when mac and cheese was my all-time favorite thing to eat. I’m talking the phosphorescent Kraft stuff, people.

I was a foodie even back then, but my definition of gourmet was to throw a few flecks of bacon it in to spruce it up.

As I got older and my kids came along, I got all snobby and started adding lobster to my mac & cheese – especially if friends were coming over. I’d even add Read More

pumpkin spiced turkey chili

Roasted Turkey Pumpkin Chili

My husband keeps poking fun at me because I tell him how cold our California Fall season is.

You might be laughing now as well, but I mean, I have to break out my jackets around this time of year! I guess I’m just so used to the warmer weather from my Hawaiian upbringing.

Even though everyone thinks I’m crazy about the weather, the one thing all my friends love this time of year is my pumpkin turkey chili recipe. It’s smack-tabulicious.

There is so much unhealthy food going around during the holidays, that it is important to me to Read More

Disneyland for adults and enjoy with friends

Adults Having Fun At Disney Land? You Bet

My family loves visiting Disney Land whenever we’re in Southern California.

We’ve been going there since before I was born. Because my parents have always enjoyed the park as much as we kids did, I guess I never thought of Disney Land as a “place for kids”. To me, it was always a place for family – including the adults!

The only requirement to enjoy Disney as an adult is that you be “young at heart”, if not in body. If you do this, you will enjoy Disney as much as we do – I promise. There is plenty for … Read More

Papalani Gelato

The plane started its descent to Kauai, Hawaii.

Looking out the window I could see the warm blue water sparkling in the tropical sun. My husband and two kids and myself are here to visit relatives. It is our Christmas holiday and the excitement of the moment wraps around me. It is going to be two fun filled weeks of family and friends. My kids hardly ever get to go to Hawaii, so they are excited about it.

Kauai is one of the main Hawaiian islands in the chain. Located in the Pacific ocean, Kauai is known as the garden Read More

Chuns Reef

The Other North Shore

The first thing I do whenever I come back home to Oahu’s North Shore is walk down to the beach and take in the fresh air.

north shore beaches

The smell of sand and the picturesque blue water and clear skies tells me that I am home. That said, I did not grow up in such a beautiful place. All of Hawaii isn’t glamorous and gorgeous, after all.

Since moving to North Shore, I’ve been doing things that I never thought I would have done before – like learning how to surf and to scuba dive because there are some beautiful reefs and … Read More
