According to USDA FSIS standards, turkey must reach an internal temperature of 165°F in the breast. For the best result, we aim for 175–180°F in the thigh, keeping in mind that carryover cooking will add another 5–10°F once the bird is removed from the heat.

How do I get truly crispy skin on my roast? +

The secret is science. We follow the Kenji Lopez-Alt method: dry-brine with a mix of salt and a little baking powder, then air-dry the bird uncovered in the fridge for 24–48 hours. Starting your roast at a high 450°F before dropping the temp ensures that “crackly” professional skin.
