Ingredients

  • 1 lb bone-in, skin-on chicken thighs (2–3 pieces)
  • 4 oz egg noodles
  • 6 cups low-sodium chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1–2 jalapeños, thinly sliced
  • 2 tbsp soy sauce
  • ½ tsp red chili flakes
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh cilantro, chopped
  • 2 limes, cut into wedges

Instructions

  1. Sear Chicken: Pat chicken thighs dry, season with salt and pepper. Heat olive oil in a large pot over medium-high. Sear skin-side down for 5–7 minutes until golden, flip for 2 minutes. Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onion, carrots, and celery for 5–7 minutes. Add garlic and ginger, stir for 1 minute.
  3. Build Broth: Add chicken broth, scraping up browned bits. Stir in soy sauce, chili flakes, and jalapeños. Return chicken to pot.
  4. Simmer: Bring to a boil, reduce to low, cover, and simmer 20–25 minutes until chicken is tender.
  5. Shred Chicken & Cook Noodles: Remove chicken, shred meat, discard skin and bones. Return shredded chicken to pot, add noodles, and simmer 5–7 minutes until al dente.
