Asian Roasted Asparagus

Chock-full of fiber, Vitamin C, Vitamin A, iron and anti-oxidants, asparagus is an awesome veggie that you can use in many tasty recipes.

You can only find fresh asparagus in the spring. In the past, it has been used as a medicine due to its diuretic properties and special aroma. Believe it or not, the asparagus has been a favorite among people since 3000 BC, first mentioned as an Egyptian staple.

Asperge is made of 93% water and it’s very low on calories as well as sodium. It is a great source for magnesium, calcium, zinc or vitamin B6 and also for protein, beta-carotene, potassium, copper and selenium.

On the downside, asparagus can make your pee smell! However, this is said to be genetic condition, and most people are not able to smell the odor. I guess I got that gene, because I can. As far as the effects that the asparagus has in urine, it is due to ammonia that’s released when particular asparagus compounds are metabolized. 

But pardon the digression!

Here is a great, tasty recipe for giving your next asparagus meal a bit of an Asian flair. 

I purchased my asparagus from the local farmer’s market. It all happened during a warm, summer morning when I decided I wanted to try something a bit different and guess what: I created the perfect dish to go with any mood swing.

Best part is, if you want to make it into a brunch, all you need is to put some fried eggs on the side and you’re all set to go.


Here is what you need:


  • 2 lbs of asparagus with the tough ends removed
  • 1 teaspoon of sesame oil
  • 1 teaspoon of olive oil
  • 2 tablespoons of soy sauce
  • · 2 minced garlic cloves
  • ¼ teaspoon of ground ginger
  • 1/2 teaspoon of garlic salt
  • 1/2 teaspoon of coarse ground black pepper.

  1. Make sure you preheat the oven at around 425 degrees Fahrenheit.
  2. Trim the asparagus and spread it out on a rimmed baking sheet.
  3. The rest of the ingredients should be sprinkled evenly over the asparagus.
  4. Roast in the oven for around 20 minutes.
  5. You can tell when it is done because the asparagus will get a slight brown color but still maintains its crispness.
  6. Marinate it with soysauce once or twice while cooking. 
  7. Add some oyster mushrooms late in the cooking for a special kick.
  8. Add fried eggs on top for a complete meal.
